I’ve been debating on how to intro this because I don’t want to shame anyone’s way of living – to each their own. so that’s not what this is. I’m just shedding a little light on what’s going on in the Lawrence household.
See, I’m on this journey to living toxic free and eating clean.
It all started when I got sick in 2010 and was forced to become a vegetarian. Really, that’s all it took.
I started reading book after book about vegetarianism leading into veganism leading into clean eating [because not all vegans/vegetarians eat clean!] leading into holistic eating leading into clean/holistic living all around and here I am almost three years later an entirely different person mentally, physically, emotionally and even spiritually. I’ve grown a deep appreciation for all animals and the earth and I am constantly in awe of my creator. How He made the earth and natural herbs to heal and cleans us without medication, how our bodies can take care of themselves when allowed to and so much more. It’s just amazing.
It’s also a ton of experimenting, but thankfully, my husband’s super supportive.
Like when I went around the house reading every label and throwing out anything that had something unpronounceable….or when I threw out my caboodle full of name brand makeup and ordered all organic/vegan/non toxic/paraben free, etc., makeup because i realized just how toxic all my old stuff was….or when I said I wanted to make my own laundry detergent, my husband just says, “okay. I trust you.”
It sounds crazy, I know. I used to think so too, but hey, you don’t know what you don’t know. But when you know, you know. And then you have that obligation of making a change or doing nothing with the knowledge you’ve gained.
Anyhow, part of the experimenting is overwhelming but other parts are super fun.
Like today’s southwest bbq wrap.
Delish. Seriously, so amazing and filling I wanted to share with you!
So here it is….
1/2 head of Romaine lettuce. I used fresh, organic Romaine from my FF2U box that came last night! If you don’t know about Farm Fresh to You, Check ’em out!
1 cup of corn
1 tomato chopped
1 avocado cubed [also came in my box last night]
1/4 red onion finely chopped
1/4 bunch of cilantro finely chopped
1 can of organic black beans
Stubb’s BBQ sauce to taste
Let’s get mixin’
Wash, chop and dry or spin lettuce. [i use my Salad Chef to wash, chop and spin. took me a whole 5 min.]
Add corn, cilantro, beans and onions to lettuce and toss. [i stopped here and jarred half to preserve lettuce for a while.]
next add tomatoes, avocado and bbq sauce and gently toss.
*It’s important to not add tomatoes and avo with other ingredients because after too much tossing, tomatoes and avo become mashed*
Warm up a tortilla, stuff, roll and enjoy!
i jarred the left overs of the full mix for the next couple lunches.
If you’re a meat eater, add some organic, grass fed chicken. 😉
